Mango Coconut Chia Pods

Mango and coconut are magical together. Chia seeds have fibre, omega 3, calcium, phosphorous and protein.. plus they add a lovely crunchy texture to the mix.

  • 1/2 can Coconut milk
  • 1 Mango (chopped)
  • 3 tablespoons Chia seeds
  • 2 tablespoons Maple syrup
  • 2 tablespoons Brown sugar
  • 1 tablespoon Coconut oil
  • 2 teaspoons Water


Step 1
Put 4 Tbsp of the chopped mango aside
Step 2
Blend in a mixer the coconut milk, the mango and the maple syrup. When the mixture is smooth add the chia seeds and evolve well with a wooden spoon.
Step 3
Pour into four glass pods and put aside.
Step 4
Heat up the coconut oil, add the remaining mangos, water and the sugar. Cook for a few minutes until the mango starts caramelising. Place the mango over the pods and refrigerate for at least 1 hour. Before serving decorate with a few coconut chips.
