Banana and pecan cake

This is one of my favourite cakes (some call it bread) – I often make it with intentions to take it to my work studio to share with my mates but end up eating nearly all of it at home…

The recipe is majorly inspired by Isa Chandra Moskowitz and Terry Hope Romero’s awesome book “Veganomicon” (‘Lower-fat banana bread’)

Ingredients

  • 3 Bananas, very ripe (use only 2 if large)
  • 1/4 cup Applesauce
  • 1/4 cup Rapeseed oil (cold pressed is best)
  • 1/2 cup Sugar (I use granulated brown)
  • 1 heaped tablespoon Maple syrup
  • 2 cups Flour (all purpose)
  • 3/4 teaspoons Bicarbonate of soda (baking soda in the US)
  • 1 teaspoon Cinnamon (grounded)
  • 1/4 teaspoon Nutmeg (grounded or freshly grated)
  • 1/2 teaspoon Salt
  • 1/3 cup Pecans (chipped into small bits)

Directions

Step 1
Preheat the oven to 175°C and grease a loaf pan (standard size)
Step 2
In a large bowl mash the bananas really well. Add the sugar, applesauce, oil and the maple syrup and mix it with a wooden spoon until incorporated.
Step 3
Add the flour, bicarbonate of soda, cinnamon, nutmeg and salt. Mix it again until all ingredients are combined.
Step 4
Fold in the chipped pecans.
Step 5
Transfer the batter to the loafing pan and bake for 40 minutes. The top should be lightly browned and a fork inserted through the centre should come out clean - if it doesn't then leave it cooking for another 5 minutes and test again.
Step 6
Remove from the oven and invert into a cooling rack. Flip the cake right side up and let it cool if you can - I always end up eating it too quickly, it's too good!
