Porcini mushroom Stir Fry
(with pak choi, tender-stem broccoli, cashew nuts & sesame seeds)

I love dried mushrooms and their earthy, nutty, rich meaty flavour. I usually make this same recipe but just with the cashew nuts and pak choi. Adding both the porcini and the tender-stem broccoli was definitely a winner.

If you prefer you could replace the porcini mushrooms with another variety but I really recommend you go for dried ones due to the flavour intensity.

Porcini mushroom Stir Fry (with pak choi, tender-steam broccoli and cashew nuts)

Ingredients

  • 1/2 cup Dried porcini mushrooms
  • 1 cup Water (warm)
  • 2 tablespoons Sesame oil
  • 2 Shallots (sliced)
  • 1 Red chilli (chopped)
  • 150g Tender-stem broccoli (remove stalk ends)
  • 2 cloves Garlic
  • 2 pieces Pak choi (roughly chopped)
  • 1 tablespoon Soy sauce
  • 1 tablespoon Rice wine vinegar (I used brown)
  • 1/4 cup Cashew nuts

Directions

Step 1
Firstly before you do any preparation or chopping soak the mushrooms in the water. Set aside and chop the other ingredients.
Step 2
Heat the oil over a medium heat in a wok (or frying pan). Add the shallots and let it cook for about 2 minutes. Then add the chillies, garlic, cashews and leave it cook for another 1-2 minutes.
Step 3
Add the vinegar, soy sauce, the mushroom water and the broccoli and cook for 3 to 4 minutes.
Step 4
Finally reduce the heat a little and add the pak choi and the mushrooms. Cook for another couple of minutes.
Step 5
Serve with steamed rice or sushi rice (my favourite combo with this dish) and sprinkle with sesame seeds.

      I have not but it should work out pretty much the same (any type of dried mushrooms should do)
