Luxurious granola
(made with coconut chips, pecans, pistachios and shaved almonds)

If you’ve never made homemade granola and you try making this I promise that afterwards you’ll be kicking yourself asking why you’d never made homemade granola before.

Three reasons why this recipe rocks:

1. It tastes fresher and therefore better than the fancy pants granola you buy at your lovely local organic shop.

2. It’s super flexible which means it can be customised for your demanding tastebuds.

3. Packed with protein, minerals, omega, zinc, calcium, iron and fibre. Imagine how crazy Popeye would go if he had granola instead of tinned spinach.

Store in an airtight container in a cold dry place.

Ingredients

  • 2 cups Jumbo Oats
  • 1/2 cup Mixed Seeds (I used pumpkin, sunflower, linseed and sesame seeds)
  • 1/3 cup Almond milk (or your favorite non-dairy milk)
  • 1/4 cup Maple syrup
  • 1/4 cup Coconut chips
  • 1/4 cup Pecans (halved)
  • 1/4 cup Pistachio kernels
  • 1/4 cup Flaxseeds (grounded)
  • 1/4 cup Flaked almonds

Directions

Step 1
Preheat the oven to 175°C and place some baking paper over an oven tray.
Step 2
In a medium bowl add the oats and the seeds mix. In a separate small bowl or glass stir the milk and maple syrup together then add it to the oats, stirring again until well combined.
Step 3
Spread the oats mixture evenly over the baking tray and bake for 20 minutes.
Step 4
In the meantime in a bowl mix the different 5 ingredients you want to use - you can use any types of nuts or dried fruit. The trick is on the ratio of the ingredients you use (5 types x 1/4 cup). In this recipe I present you my current favourite mix which is made of pistachios kernels, pecans, flaked almonds, grounded flaxseeds and coconut chips. It's YUM!
Step 5
Once the oats mix is ready (should look golden brown) leave it to cool for 10 minutes then mix it with the nuts and dried fruit.
Step 6
Enjoy with your favourite non-dairy milk or yogurt and fruit or simple on its own. Store in an airtight container in a cold dry place.
